Food & Family Friday - Toasted Coconut Ginger Blondies (plus a giveaway!)

Food & Family Friday is this new thing I'm doing. Mostly, because I like food and my family a lot (and not necessarily in that order).

F & F posts will feature easy recipes and some fun ideas that will bring your family together in the kitchen. This first recipe is a doozy, so brace yourself.


Toasted Coconut Ginger Blondies
  • 1 cup sifted flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1/2 cup chopped crystallized ginger
  • 1/3 cup butter, coconut oil*, or palm shortening
  • 3/4 cup packed brown sugar
  • 1 egg
  • 1 tablespoon vanilla extract
  • 1/2-1 cup flaked unsweetened coconut
Preheat oven to 350 degrees F (180 degrees C). Lightly grease an 8x8 baking pan with extra fat of choice.
Sift the sifted flour, salt, baking powder and baking soda together into a small bowl. Stir in the crystallized ginger.
Melt fat of choice gently over low heat in a medium sized saucepan. Whisk in brown sugar, mixing well. Let cool slightly if warm.
Whisk egg and vanilla extract into the sugar mixture. Mix in flour mixture in stages until well combined.
Spread batter into prepared pan and sprinkle flaked coconut on top. Bake for 15-25 minutes.

These are so yum.They certainly didn't last long around here. :-)

Jackson had fun with these too, because I let him sprinkle the coconut on top.

I had never cooked with Coconut Oil prior to preparing these. Apparently it has like a zillion other uses too, many of which Tropical Traditions discusses on their website.

    I use coconut oil and butter exclusively in cooking, so it would be hard to say just what I'd use it in! I also use coconut flour, and coconut! It is a wonder food, especially as we are gluten free at Miller Manor.

  39. I'd make "buttercream" frosting with it. My youngest is very allergic to dairy and soy in all forms, and I make vanilla bean "buttercream" with coconut oil and almond milk instead of butter and heavy whipping cream that's to die for!

  50. This is a little unusual, but I have a friend who makes her own deodorant using coconut oil. I've been wanting to try that, but I'd definitely use some to make those blondies. Yum!
