Menu Plan Monday 9/14/09

Today I'm battling a terrible cold, but I wanted to do this really quickly so that hopefully it's one less thing I can worry about this week.



Monday: Breakfast for Dinner- Simple Crepes (recipe below) and fresh fruit

Tuesday: Crockpot Beef Stew and homemade rolls

Wednesday: Spaghetti Bolognese with salad

Thursday: Empanadas and Spanish Rice (one of my most popular recipes)

Friday: Pizza Night

Simple Crepes Recipe

You will need:

2 eggs
1/2 cup water
1/2 cup milk
a pinch of salt
1 cup flour
3 tablespoons butter (softened)


1. In a mixing bowl whisk together the milk, water, and eggs.
Then slowly add the flour and salt. Whisk together until smooth.

2. Warm your skillet to Medium/High heat.
Pour the crepe mixture into the skillet making
sure to have it coat the entire bottom of the pan evenly.

3. Cook each crepe for two minutes or so then flip with a spatula to cook the other side.

Makes 4 large crepes, or 6 medium crepes.

Best when served warm with butter, homemade whipped cream, or fresh fruit compote.

Awhile back several of you requested that I share more recipes,
so starting today I'm going to try and do that.

Now that it isn't blazing hot here anymore,
I'm more willing to get in the kitchen and try out new things!
